Ingredients

Thyme Meringue
120g Egg white
80g Sugar
4 pot soft thyme-chopped

Preparation

Whisk the whites and suger until soft peaks. Fold in the thyme and spread on silpats
and dry. Break into small pieces.

To serve
Grilled Raspberries
Sheep Cream
Seasonal aromatic flower
Thyme meringue

Arrange the raspberries o a plate with the flowers over the top. Finish with some of
the meringue then pour the cream at the table.
